EXAMPLE PREPARATION - FRIED PATIN WITH SPECIAL BEANPASTE SAUCE

1. Place the sauce ingredients in a blender and process to a paste.
2. Add in spring onions and coriander leaves and adjust seasoning if necessary.
3. Set aside.
4. Heat the oil in a wok.
5. Rub the fish with salt, pepper and coat with cornflour.
6. Deep fry the fish, remove and drain of excess oil.
7. Pour the sauce over, top with coriander leaves and serve immediately.

Storage:
Frozen at -18°C or less.
